When creating our seasonal menus, discussion and planning always start at least two seasons ahead to allow for the whole team to be involved, including Marco himself and our team, to bring it to life!
Step 1
Initial brainstorming meetings with Marco at his Rudloe home to discuss the recipes and ingredients used. Our seasonal menus focus on simple dishes with seasonal and perfectly placed ingredients, so the focus is always on this whilst creating delicious dishes.
Step 2
Menus tweaks from our expert executive chef teams, ensuring the recipe can be created within our restaurants and then getting the final sign off from Marco.
Step 3
A full brief into our internal teams for the creative elements to commence. The menus are sent for design, the mood board is briefed to our photographer and creative teams, and the plans are being put in place for content, timelines and rollout across our entire restaurant brand.
Step 4
A photoshoot in Leicester Square with our incredible brand photographer to capture each dish along with lifestyle shots for all our brand restaurant concepts, with a focus on our ‘hero dishes that will become the focus of the season.
Step 5
A range of different artwork and assets are created and signed off by our brand and marketing director, including digital assets for email campaigns, social media assets, POS to be displayed in our restaurants and also in-house marketing for any hotels that have our restaurant in them to extend the advertising.
Step 6
A full ‘recipe to success’ toolkit and timeline campaign is shared with all of our venues, which includes a timeline for launch, artwork, details on the brief, menus, ways to get involved, promotional ideas & more!
Step 7
The menus are delivered, ingredients ordered, teams are briefed, and it’s ready to launch!
Step 8
Our wonderful guests get to taste the flavours of the season and enjoy our delicious menus.
